Lentil Salad with Feta Cheese

- 200 gr. of small green lentils
- 100 gr. of feta from Smeds
- 2 sweet potatoes orange color
- 4 carrots
- Green onion
- 1/4 bunch of green coriander
- 1/2 box of Italian Rocca (Ruccola)
- 70 ml of olive oil
- Lemon juice from 1 pc
- 70 ml. of balsamic
- Pinch of salt and black pepper
- Boil lentils till cooked. Drain and place in a mixing bowl.
- Boil potatoes and carrots cut into circles.
- Finely chop the coriander and green onions.
- Mix all ingredients and sprinkle with salt and black pepper. Put feta from Smeds on the salad after pouring it.
